Our recipe for simple and allergy-friendly apricot balls

With food allergies it can be a struggle to find yummy recipes for you and your family. With this super simple and quick recipe that requires no baking or cooling down, we can promise your sweet cravings will be satisfied!
The dried apricots in the recipe can act as a substitute to the very sweet dates that are usually used for adding natural sweetness to refined sugar-free recipes. It is possible to switch the apricots out for pitted dates if apricots aren’t your favorite. Just keep in mind that the sweetness will be much higher with dates, so you might want to try out making a small batch at first to adjust the flavors to your and your child’s taste!
The wonderful thing about this recipe is that you can mix it up and be creative. If neither you or your child suffer from a nut allergy, you can even try to use almond flour. It will give your apricot balls a nutty and slightly sweeter taste!
Ingredients:
- 200 g dried apricots
- 2 tbsp rapeseed oil
- 1 lemon (juice and zest)
- 2 dl shredded coconut
- 1,5 dl oat flour (made by mixing oats into a fine powder)
Instructions:
- Mix the dried apricots, the rapeseed oil and the juice and zest from one lemon in a mixer.
- Incorporate the shredded coconut (but leave 0,5 dl to cover the balls in) and the oat flour.
- Roll the mixture into balls and cover in the rest of the shredded coconut.
- (Optional) If you want a firmer texture, cool the apricot balls in the fridge for up to one hour.
