Our recipe for delicious allergy-friendly, refined sugar-free oat cookies
Dairy-free, nut-free, gluten-free, egg-free, and refined sugar-free.
I love baking with my son. His food allergies can make it challenging at times, but I have found ways of making him delicious, sugar-free, and allergy-friendly pastries. Here's one of our favorite, easy allergy-friendly recipes that is great to bake together with your children:
Ingredients:
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/2 cups oat flour
- 1/2 cup dairy-free chocolate chips (optional)
- 2 tablespoons date paste (made by blending pitted dates with a small amount of water)
Instructions:
- Preheat your oven to 175 °C and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the melted coconut oil, unsweetened applesauce, and vanilla extract until well combined.
- Add in the salt and baking powder, and whisk again until everything is fully incorporated.
- Add the oat flour to the bowl, stirring until you have a thick dough.
- Fold in the dairy-free chocolate chips and date paste until they are evenly distributed throughout the dough.
- Use a cookie scoop or spoon to scoop the dough onto the prepared baking sheet, leaving about an inch of space between each cookie.
- Bake for 10-12 minutes or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
These cookies are perfect for a healthy, allergy-friendly snack that kids will love! The date paste adds just the right amount of sweetness without any refined sugar, and the oat flour makes them a great source of fiber.
