Our recipe for delicious, healthy, allergy-friendly, vegan (optional), refined sugar-free banana pancakes

In this blog post, I'll be sharing a recipe for banana pancakes that are free from dairy, peanuts, tree nuts, sesame, eggs (optional), and refined sugar. Instead of flour, this recipe uses oats, which are a great source of fiber and protein. Here's what you'll need:
- 1 ripe banana
- 1/2 cup rolled oats
- 2 eggs (or substitute for flax or chia seed "eggs" – see instructions)
- 1/4 teaspoon baking powder (optional)
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Coconut oil or non-dairy butter for cooking
Instructions:
- In a blender or food processor, blend the oats until they become a fine flour-like texture.
- In a mixing bowl, mash the banana with a fork until it becomes a smooth paste.
- Add the oat flour, eggs, baking powder, cinnamon, vanilla extract, and salt to the bowl, and whisk until the batter is smooth.
- Heat a non-stick skillet over medium heat and melt a small amount of coconut oil or non-dairy butter.
- Using a 1/4 cup measure, scoop the batter onto the skillet and cook for 2-3 minutes on each side until golden brown.
- Serve the pancakes warm with your favorite toppings, such as fresh berries.
- If you're looking for a substitute for eggs, you can use flax or chia seed "eggs" instead. To make a flax or chia seed "egg," simply mix 1 tablespoon of ground flax or chia seeds with 3 tablespoons of water and let it sit for a few minutes until it becomes thick and gel-like. You can then use this mixture as a replacement for one egg in the recipe.
